I can’t do the routines daily due to work, but when I resume the workout, should I resume it from the exercise schedule where I left off, or from what is scheduled for that day? If it’s resuming the exercises in order instead, how do I change it in the app to go back to the day type of exercise I left off at?

If you miss days, don’t worry about matching the calendar. Just resume from where you left off and do the next scheduled workout in the sequence. The app is built around progression, not specific weekdays, so skipping days won’t break anything. You don’t need to change a setting for this. If you ever want to realign it mentally, you can just treat the next workout as your new “Day 1” and keep going. Consistency over time matters way more than sticking to exact dates anyway
